Mango Black Bean Salsa

Are you big into the resolution thing? I've always kind of found them pointless, but of course I make them anyway. And they include all the traditional ones that everyone vows to do, you know, losing weight, getting more organized, keeping the house cleaner, being more patient with everyone and everything around me...This year, I'm adding two new ones to the list:  1) learning how to become a better bread baker (this, after the meh challah I made yesterday) and 2) coming up with and finding more new delicious and healthy recipes that I can make for my family and share with all of you, like this easy but healthy recipe for Mango Black Bean Salsa.

The inspiration for this came about because my daughter is a passionate mango lover!! Stranded on a tropical island with nothing but mangoes to eat would be a little piece of heaven for her! She likes nothing more than to cut open a ripe mango and eat it standing over the sink, juice dripping down her adorable chin! When mangoes were on sale a few weeks ago, one of them went that way, the other went the way of this mango salsa.

If you're looking for something a little different to serve for a New Year's party, this would be great and it comes together in minutes. Basically all you do is chop up everything and let it sit together for a while so the flavors can intensify--

Serve this with some chips and you've got an amazing and pretty healthy appetizer!


Mango Black Bean Salsa

serves 4-6 as an appetizer
Prep Time:  10 minutes; Chill Time:  1 hour

Ingredients

  • 1 ripe mango, peeled and cut up into small chunks
  • 1/2 red onion, finely chopped
  • 1 small can black beans, rinsed and drained
  • 2-3 tablespoons lime juice (fresh if possible)
  • 1 tablespoon oil (I used canola)
  • salt and pepper to taste

The Recipe

1.  Mix together the mango, red onion, beans, lime juice and oil in a medium bowl. Taste and season with salt and pepper. Chill for at least 1 hour. Serve with tortilla chips.
