Nigella's Slime Soup-Famous Fridays

In case you forgot, tomorrow's the big event!! Are you fully prepared? Candy purchased? Costumes ready? House decorated?!! Being that the holiday falls on a Saturday this year, I predict a lot of trick-or-treat traffic. But I'm getting ahead of myself--today is still Friday and around here that means it's time to celebrate someone in the foodie world. I've long wanted to make Nigella Lawson a Famous Fridays honoree because I love her recipes but never in my wildest dreams did I imagine that out of all her wonderful dishes that I've cooked, I'd be sharing her Slime Soup, but hey, it's just so perfect for Halloween that I couldn't resist.

No matter what you think of Nigella and all the drama that surrounds her, you can't deny that her recipes are interesting, drool-inducing and very accessible for the home cook. Most of her dishes are family-friendly, geared to every-day life and homey celebrations. She's a mom and a regular person who learned to cook from her mother and grandma and incorporates a lot of their recipes, advice and love into her recipes. So though she may not be a trained chef, with 7 cookbooks to her name, not to mention several TV cooking show stints, the lady really knows her stuff...and she's fun too, like this Halloween-themed green pea, Slime Soup!!

If you can get your kids to sit still long enough to eat this before going out on their quest to acquire and consume as much candy as possible in one night, this soup will go a long way to preventing those sugar-overload tummy aches and mood swings! Plus it's creepy, spooky, great tasting and ridiculously easy to make too. All you do is boil frozen peas with a scallion, water and a bouillon cube. Then you either toss the whole thing into the blender or use an immersion blender to puree the entire thing, adding in fresh mozzarella in the process, so that you're left with a lusciously smooth cheesy green pea concoction.

Nigella's Slime Soup-Famous Fridays

Makes 4-6 servings
Prep Time:  20 minutes

Ingredients

  • 4 cups frozen peas (about two 10 ounce packages)
  • 1 scallion
  • 1 chicken or vegetable stock cube
  • 3 cups boiling water
  • 1 eight ounce ball fresh mozzarella, cut into little cubes (this would probably be good with other cheeses too, like Swiss or Gruyere, though I've never tried it that way yet)
  • Salt and pepper to taste

The Recipe

1.  Place the peas, scallion, stock cube and boiling water into a medium-sized saucepan over medium-high heat and boil until peas are completely tender. Remove from the heat and allow to cool slightly. 

2.  When cool enough to handle, remove the scallion and discard. Add the mozzarella to the pot and use a immersion blender to blend the mixture entirely smooth (or blend the whole thing in batches in the blender). Season to taste with salt and pepper. Serve immediately or reheat over a low light right before you're ready to eat it.

3.  Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
