Pico de Gallo
So…tomorrow is Cinco de Mayo and it’s likely you can’t celebrate the way that you used to. But that doesn’t mean there can’t be a party. Enter this easy and addictively yummy Pico de Gallo. Get ready to get into that chip and dip mood!!
Pico de Gallo, or salsa fresca as it’s sometimes referred to, is a a fresh, chunky salsa that’s made with just a handful of ingredients—tomatoes, onion, jalapeños, garlic, lime juice, cilantro and salt. It comes together in just a few minutes and has such a bright, zingy flavor!
It’s amazing of course with the obligatory tortilla chips but also works well as a side for simple grilled chicken and fish.
I promise you’re going to love it!
So…whip up a batch, get those chips ready, mix up a margarita (or two) and imagine you’re living it up in your favorite Mexican restaurant. Hang in there, my friends!!
Pico de Gallo
Makes about 4 cups
Prep Time: 15 minutes
Ingredients
2 large ripe tomatoes, chopped into bite-sized pieces
1 small onion, finely chopped
2 jalapeños, seeds and ribs removed, minced
1 garlic clove, minced
Large handful of fresh cilantro or parsley, finely chopped
The juice of 2 limes
Large pinch or two of kosher salt
The Recipe
1. Mix all the ingredients together in a medium-sized bowl and let sit for at least 10 minutes at room temperature to allow all the flavors to come together. Serve immediately or cover and chill in the fridge for 4-5 days.
