Auntie Susie's Cinnamon-Sugar Cream Cheese Rollups

So...now that we're done with Christmas (hope it was amazing!) we're ready to jump right into New Year's. Do you have any plans yet or are you still wrestling with the pressure of "WHAT TO DO?!!"  More than other holidays, we attach a strange significance to this one rather randomly selected night which can definitely add unwanted stress to what is supposed to be a fun evening. After all, it's just another night! But not really, right? Who am I kidding? Aargh!!! Well, no matter what, the likelihood is that you'll be doing some sort of celebrating that requires yummy little hors d'oeuvres and if you are, you can do no wrong in the "little nibbles" department with these cinnamon-sugar coated cream cheese filled spirals! They're super easy to make and everyone loves them!

These delightful little goodies are the stuff of my childhood, courtesy of my Auntie SusIe, who regularly made them for all our holiday celebrations. We would have been devastated if she hadn't!! They're sweet and meltingly delicious! Totally irresistible! And they have the added benefit of being able to be made up to a month ahead and use only 4 simple ingredients!

You start by cutting off the crusts of plain old soft white bread.

Next you use a rolling pin to flatten those slices nice and thin. 

Now you spread them with whipped cream cheese-- 

And roll up into small logs. 

Now's the really sinful part--you dip each log into melted butter and then coat with a mixture of cinnamon and sugar. The perfect combination!!

Now it's freezer time for these little guys, while you go off and take a nap so you can be blissfully awake for the dropping of the ball!!

All that's left now is to slice and bake them. It just doesn't get easier--

Or yummier!! People adore these! They're a little bit out of the ordinary and really balance out any of the other savory treats you're serving. The perfect stress-free way to say goodbye to the old and ring in the new!!


Auntie Susie's Cinnamon-Sugar Cream Cheese Rollups

Makes about 6 dozen little bites
Prep Time:  25 minutes (plus at least several hours of freezing and up to one month); Bake Time:  15-20 minutes

Ingredients

  • 1 large loaf soft white sandwich bread, sliced (I used Wonders)
  • 1 large tub whipped cream cheese (About 11 ounces, I used Temptee)
  • 8 tablespoons butter (1 stick)
  • 3/4 cup sugar
  • 2 teaspoons cinnamon

The Recipe

1.  Discard the two ends of the bread or use for something else. Cut the ends off of the rest of the slices of bread. Use a rolling pin to flatten as thin as possible. 

2.  Spread a generous amount of cream cheese on each slice of bread and roll up tightly into log-like cylinders.

3.  Melt the butter in a small saucepan and transfer to a shallow bowl. Mix together the sugar and cinnamon in a shallow bowl. Dip one log at a time in the melted butter, coating it well and letting the excess drip off. Then, roll in the cinnamon-sugar mixture and coat well. Transfer to an airtight freezer-safe container. Repeat with the remaining logs. Freeze logs for several hours until completely frozen and firm and up to one month.

4.  When ready to serve, preheat oven to 350ºF. Spray a baking tray with non-stick cooking spray. Using a sharp knife, cut logs into bite sized pieces (I usually get 4 from one log) and arrange on baking sheet about 1 inch apart. Cook for about 15-20 minutes, until completely heated through and crunchy on the outside. Serve immediately.
